Il Mannarino was founded in Milan in 2019 with the aim of bringing the neighborhood butcher shop back to the center of everyday life, transforming it into a place of connection, transparency, and conviviality. Today, the company operates 23 locations across Lombardy, Piedmont, Liguria, Emilia-Romagna, and Veneto, employing over 450 people. We carefully select our raw materials and directly oversee the entire supply chain—from the choice of farms to processing, all the way to service in our butcher shops with kitchens. We primarily collaborate with local farms and small Italian producers, and we process our meat in-house at MannaLab, our proprietary production facility. Through the Il Mannarino Code of Practice, we adopt responsible farming practices and ensure animal welfare and full traceability, in line with European guidelines and standards for a healthy and sustainable food supply chain. By embracing a nose-to-tail philosophy, we reduce waste and enhance the value of every part of the raw material.
